Eggless Fresh Fruit Cakes are present in birthday parties and weddings. You can make it your own with easily available ingredients at home. Enjoy a delicious baked dessert that is ideal for vegetarians and very light, fluffy, creamy and very healthy too. Decorate it with your favorite and seasonal fruits.

All-purpose flour 1¾ cup
Curd 1 cup
Caster Sugar (pisi hui chini) 1½ cup
Butter Melted (Salted)/Oil ¾ cup
Soda Bicarbonate (Meetha Soda) 1 teaspoon
Dry Fruits (of your choice) ½ cup
Baking Powder ½ teaspoon
Vanilla Essence 1 teaspoon
Coloured Cherries ½ cup
Milk 4 tablespoon
Glycerine 1 tablespoon


Fresh cream 1 cup
Caster Sugar ½ cup


Fresh fruits of your choice (I have used Strawberries, Pineapple, Kiwi) To Taste
Sugar Syrup 1 tablespoon


  1. Preheat the microwave for 10 minutes.
  2. Meanwhile, sieve maida, soda and baking powder all together and keep aside.
  3. Combine the sugar, oil and curd in a deep bowl and beat well in one direction using a whisk or hand blender.
  4. Now add the sieved flour mixture and mix gently with the help of spatula for 3-4 minutes till it gets smooth and light. The batter should be of medium consistency.
  5. Add milk and vanilla essence and mix it well.
  6. Add a glycerine in the mixture and mix again. (See Tip Below)
  7. Add dry fruits and cherries in batter and put some into bowl before placing the batter.
  8. Pour the batter into a greased and dusted (sprinkle some amount of maida) microwave bowl. (See Tip below)
  9. Microwave it for 5-6 minutes on maximum power of your microwave. (It depends on microwave also, so first microwave it for 5 minutes and check it with toothpick as said in 10.)
  10. The cake is ready when it leaves the sides or you can check by inserting the toothpick into it. It should come out either clean or with only a few crumbs clinging to it.
  11. Remove from the microwave and invert the bowl over a plate and tap it to unmould the cake.(If you are using bread wrapper for lining, just remove directly the wrapper from bowl and put it on plate.)
  12. Chop fruits, and mix it in whipped cream.
  13. Spread the whipped cream all over the cake.
  14. Now decorate it with fresh fruits of your choice.
  15. Decoration is totally your innovation
  16. Now add sugar syrup over it.

How to make whipped cream from fresh cream?
Add fresh cream in a bowl and beat well in one direction using a whisk. Meanwhile, add sugar in between and continue beating till it becomes very creamy.(It is something like how you make butter from milk, the procedure is same.)

How to make sugar syrup?
Boil 2 tablespoon of water with 1 tablespoon of sugar until the sugar gets dissolve.


  • I used bread wrapper for lining microwave bowl instead of Step 8. The cake came out easily and the bowl remained clean as well.
  • Add a few drops of glycerine while beating the cake batter to make it spongier n softer.
  • You can also add fruit essence of your choice instead of vanilla essence, if you don’t like vanilla flavor.
  • Cut the cake from middle into two parts and spread whipped cream there also to make layered cake.

    1st time when I made the cake it got burnt n it was extra sweet then I realized flour was only 1cup..2nd time when I had to bake my microwave stopped working. .can I bake it in the oven? N at what temperature n how much time. . .this is the 1st time m making a cake. .pls help with all the details to make this cake in the oven.. thank u

      hi vrushali, firstly, i just wanna ask, did you find the soln y ur cake got burnt?? and regarding is totally depend on taste. you can taste in batter itself before baking. I will suggest you to use microwave bowls only like borosil, not to use plastic material, and if you are making or baking things first time in microwave, do check in between and keep an eye on it because microwave temperature and their power differs from brand to brand. Now come to the oven part..Preheat the oven to 180 deg C for 10 mins.Pour the batter prepared tin and bake in the pre-heated oven for 10 minutes at 180 degrees. Then reduce the temperature to 160 deg C and bake it for another 35-40 mins or until a knife inserted in the cake comes out clean.Keep an eye over it specially if you are making it first time. But frankly speaking, I havnt tried the cake in oven because I dn have that. :) Keep cooking and posting :)

      hi….. sorry for late replying. Generaly what we do..grease the microwave bowl before putting the batter…

      but you can use bread wrapper, means in microwave bowl, firstly put bread wrapper and then put your batter…so that it wil come out easily…

      sometymes it is difficult to remove the cake after done…but by using this bread wrapper lining method…you will not face dis can easily remove your cake just by putting out that wrapper. hope this will help…if not, do tell me and msg me your contact no. on

    Hello..i tried this cake recipe. Actualy this was my first try ever in cake baking or you can say I am a beginner in baking. My outcome of cake was now satisfactory. cake got baked from outer layer but when I cut it, it was soft and half cooked from inside because of this outer layer was crunchy and inner was very soft and soggy. Even the colour if outer layer was brown but inside it was off white colour. I baked it at 180 for 15 min. Please tell me why it happened and how can I ractify this mistake for good cake. Thank you.
