Take 1 cup atta, 1 cup maida, 1 tsp salt, 1 tsp oil in a bowl and mix it well.
Now add refined oil in it. Mix everything well and rub it in the flour evenly. The mixture of flour and oil should resemble breadcrumbs.
Now add 2 tbsp water each time and only mix the dough. U don’t knead the dough, it is just mixed cold water in the mixture and makes a hard dough. I took 8 tbsp oil for my recipe.
If time permits, u can cover the dough and keep aside for 30 minutes to rest.
Make marble sized even balls from the dough and flatten them slightly.
Roll each ball to medium thickness with a rolling pin or belan into small puris.
Prick each mathri with a fork.
Heat oil in a kadhai. When it is hot enough, reduce the heat.
Add 9- 10 mathris and fry them on medium heat till crisp and golden.
Drain them on kitchen paper towels to remove excess oil.
Fry remaining mathris in batches.
Store them in an airtight box when cooled.

You can roll a large piece of dough, and cut with a cookie cutter or in different shapes for your kids.
